They're literally just "updating" the OT for modern audiences. It's not as much about being afraid to try out new ideas, as it is trying to continue selling the same brand all over again with a new coat of paint on it.
They're following the "if it ain't broke, don't fix it" strategy. Same reason Disney has been pumping out animated princess movies for almost a 100 years now.

Here's a more original plot, Luke is an old mentor to the kids, he dies fighting Kylo Ren who is trying to drop a meteor on an important planet, In the end the combined will of all the people makes the force pull the meteor back and kylo ren dies while this happens due to the force of the force, everyone else comes to understand each other and there is peace in the galaxy for the rest of eternity and they never make one of these shitty movies again

Better idea.

Luke is killed by kilokhan while he is using the force to stop the meteor. The meteor hits the planet and the lead goes into a catatonic state playing shit in their mind until finally months later they snap out of it, ready for action. Where they meet kyle at the center of the impact crater.
