They used to rule the galaxy but, because of the jedi, they were overthrown and replaced by the Republic 1000 years ago.

No, it got wiped, too. Shame, the ancient stuff was generally the coolest EU material. But enough of it got retained via Yoda's trip to Moraband/Korriban at the end of The Clone Wars that you can infer that the history will still be essentially the same. The Sith were defeated by the Jedi 1000 years ago and their last survivor, Darth Bane, took the order underground, limiting its number to a mere two in order to avoid ruinous infighting while they plotted their return to power.
