Well actually, while for some people it could be considered an over confidence, the ability to draw and fire is sort of a forcefield because it can give reassurance of safety to someone who might not otherwise feel safe.
It works a bit better than the martial arts analogy because a vast majority of people who practice martial arts at a high level admit that they are actually a bit more scared of confrontations.

Milk production hormones are always present in human women (And sometimes men), they just kick into over-drive when a woman gets pregnant, as the body is preparing an ample milk supply for baby so it can begin to feed the moment it wants it's first drink.
So long as there's something trying to get a drink from the tap, however, eventually milk with start to flow. It just won't be as immediate as a pregnant or recently pregnant woman.
It's why adopted mothers (And wet nurses...If those still exist) are capable of breast feeding their adopted babies despite not actually giving birth.
They also make pills to help induce lactation as well, and there's a number of hormonal issues that can exist in a woman that can cause them to just constantly be lactating.
