I think all of them have at least a little stuff that you wouldn't learn in a non-magical school, though in some cases it would be largely incidental. There isn't a Harry Potter-style focus on only magical things, or a clear separation between what beings are or aren't magical though. Also notice that aside from a few just-for-fun electives (eg Art) they all have clearly magical postrequisites. This was done to imply that these fundamental disciplines include some degree of magicality as well as to highlight the vagueness of the division between what is and isn't magical.

I'm planning to do a little something about that, but I'm not yet sure what form it will take. Your assessment seems about right. Magic users on our plane generally toy around with governments and corporations, but have a standing agreement not to not interfere with mundane life too much, originally to avoid confounding factors in sociology experiments. Those on other planes have different arrangements.
Plane hopping isn't very easy, and few mages do it often. Sort of like continent hopping for mundane folks here.

When crafting them, there's no hard limitation but it depends on your skill. Shaping what's physically there isn't too hard, though complicated things such as life require a very thorough understanding of the subject matter to work right. Messing with the laws of physics also requires a thorough understanding, and is a difficult endeavor that goes beyond what is officially covered by the class, though there's a certain rambunctious professor who will teach a workshop on messing with how gravity works periodically.
After creation, things aren't any more morphic than a normal plane unless you built features in specifically to make it easy to control.
