You can, and that's what it's for.

That said, butterfly blades like this are purely martial arts weapons and I don't think they ever saw much actual military use.

That's what I was thinking. Aside from the fact it has no downsides if they don't have some sort of "maximum sharpness" shit would get crazy. I'm pretty sure this is what destroyed the Redguard homeland in the elder scrolls series

The quillions can be used to trap an opponents blade if the try to parry. One of the basic moves for butterfly swords is to perform a simple thrust with the flat of the blade held level so that the quillon faces the direction of opponents blade. If they attempt to parry your sword away with their own it creates a window of opportunity to catch their blade and twist yours vertically to trap theirs horizontally between the blade and quillon of the butterfly sword.

Basically you provoke your opponent into trying to defend a thrust when really you're trying to get his sword into a position where you can trap it.

Wrong, the blades/edges are like circumferential lines on a sphere.
You'd have infinite number of edges on a club, they'd all just be infinitely thin and rendered infinitely dull since there's no distance between them and the edge next to it.

If your DM is a sane man and doesn't allow this genius idea incarnate, then you just reforge it into a Flanged Mace, where each of the small flanges would be a blade, crushing and slicing your enemies at the same time!

My game has a recurring blade the DM loves, Noxbrand. Thick fog billows out from the blade if unsheathed, weaving the blade through it all controls the direction.
So a thief could unsheath it in a hallway, direct the fog at the guards, and slip by unseen.

First of all, Shehai Shen She Ru is not the same thing as the Pankratosword. Second of all, the word "atomos" is used literally, as in "that which is unbreakable". They're talking about the Earth Bones, not actual atoms.

There's a softcap to its sharpness, in that once it can cut through sufficiently dense material with no resistance it'd never get any blunter. You'd never accidentally split the atom or anything, but if you dropped them they would cut right through anything they hit. And you'd never be able to sheathe them; you'd have to magnetize them to make them stay in place.
