To be fair it's not hard to imagine that when a religion condemns something, it would probably also condemn any glorification of that thing, anything that presents them as something cool and desirable that can be used for good.
People in the modern world seem much more lax about enjoying fiction in which characters we're supposed to like and admire do socially unacceptable things or are bad people, but I'm not sure ancient hardcore Christians would've felt the same way.

I imagine part of it is a generational thing. Back when I was in the Lutheran elementary school system, you couldn't get Harry Potter or Animorphs books from the monthly book catalogs. The Pope can change the rules because Catholics believe that there's a specific covenant between the Popes and God.
If a Pope decides that something should be a certain way and specifically asks God to make it so, God will honor their agreement and make it so. Part of that covenant is supposed to be that the Pope has a strong obligation to ensure that everything asked for is morally correct and the consequences thought out, which is why the church is sloooooow with adapting to changes in moral views.
Stillborn children don't go to purgatory anymore because a Pope decided that it wasn't right for that to happen. People who are cremated don't go to purgatory anymore because a Pope decided that it was time for that to change.

The transition from OT to NT was a lot about "further revealing" the word of god. So, for example, people did not sacrifice animals to please god but to remember their sins. With Jesus' death, his sacrifice ended all sacrfice, and confessing your sins before god takes that same role. Another is the restriction on certain food items. Jesus says it wasn't that the food was somehow tainted and it wouldn't taint you by consumption - as food just went in and then out again. It was restricted for a different reason, and he more or less "declared all foods clean." The things that "changed" are really more examples of "You can't do X because Y" into "X is okay if you are wary of and prevent Y."

Also, a lot of the OT rules and restrictions were actually sanitation laws (the "ceremoniously unclean" stuff in particular, which included certain foods) or things that the people needed at that time. For example, after Egypt, God tried to form what was almost a democracy, but the people begged for a king to rule them. He told them "you won't be happy with a king," and they begged anyways, so he outlined a way for them to anoint a king over themselves. Clearly, you can't point to that outline and say, "We are defying god by not having kings," because there is more to it.

Lastly, it IS a new covenant that is replacing the old one (IIRC). What isn't changing is the word given to Abraham and Moses, which he is also explicit in saying he's here not to defy but to fulfill. It's pretty much summed up as, "Behold, I will give you a new covenant. The old one was fine but you pieces of shit keep refusing to adhere to it, so here's one that is easier to keep." Thus the holy spirit and writing his word in their heart. (Hebrews 8:6-13. The OT prophesy that it is fulfilling is Jeremiah 31:31-34).
