Classic Traveler has solitaire rules if that's your Jam. Mahjong puzzles (not the correct discard ones, the kind Windows comes with) are single player. Crosswords are always good fun, though the increase in celebrity or film/TV knowledge has me doing them less and less.

Dawn of worlds is quite a compact thing, you could play through some worldbuilding.
Not exactly cheap but Legendary Encounters: Alien is a lot of fun and can be played single player.
