Okay. So your character has a mental illness. Play it like this:
They're trapped in their own heads. Unaware of their own self or their actions (or the consequences thereof), the world is a bizarre, alien place out to get them. They alone are in the right - always. It is the world that is wrong. The world is to blame, other people are to blame. Never them.
Basically, your character will probably be a huge piece of shit for reasons entirely out of their control and treatment will be an arduous process. I don't recommend it.

Have a central paranoid delusion and rationalise around it.
IE. Mobile phones are collecting all sorts of illicit data on you all the time, so you subtly hide away whenever anyone gets their phone out, break any unattended phones when no-one's looking etc. Don't overplay the paranoia, but make it present.

Make your character pathetic rather than wacky. Show him struggling with his disorders and angry at his failure to do so. My grandmother is dealing with dementia right now and it's incredibly sad.

If by "mentally unstable" you mean "mentally ill to some extent," I'd say pick a disorder and stick with it. Is your character depressed? Do they have a/multiple obsessions or compulsions? Are they an untreated schizophrenic? Are they a psychopath, or have antisocial personality disorder? Or borderline personality disorder? Or intermittent explosive disorder? Etc.
For me, an important part of playing a character with a mental illness is to remember that they have a specific disorder that causes specific problems. People don't generally act out in random ways- some disorders may have behaviors that SEEM random, but likely they behave in a pattern that is simply imperceptible to most people they meet briefly.
Also, remember that people with mental illnesses still have personalities outside their disorder.
This is especially important when playing a character who is notable for having a mental illness, like a Malkavia in WoD.
Just do your research.

Decide what drives your character an hold that above all else. So if you are afraid of spiders avoid all situations that could possibly bring you into contact with spiders. Or if you're bipolar change the way you treat npcs and party members over the course of a session.

First off, lay out what the character's problem is and fucking BE CONSISTENT WITH IT. So many "unstable" characters are just an excuse to act like a retard for no reason. You need a consistent list of tics and triggers and behaviors and fucking stick to it.
Secondly, don't try to make it "cool." It's a hindrance. Don't suddenly make it a boon or try to be some Tyler Durden type shit. That's just irritating. This is a mental deficiency. Treat it like one, even when it isn't cool or when it's inconvenient.

Make sure there is some kinda of rhyme, reason, logic or method to their madness. Don't try 'generic crazy', it isn't an actual thing and always ends up fucking stupid as a result, especially in something as dynamic as a tabletop RPG. Instead, decide on a specific type of mental illness or a character flaw and accentuate the fuck out of it.

Looking at you thread OP, why don't you play a mentally stable character? I thought roleplaying was about getting the opportunity to be something you are not, you know, beyond your usual daily life.
Like any other character.
It will make the game a bit more difficult for you and your companions, as you'll be focused on the illness rather than the plot.
But that's a bit of the point of a mental character.
So do some research, find that Anxiety is made up of various things, like general anxiety, phobias, social anxiety, separation anxiety, agoraphobia, and so on.
Then do some reading into the specific kind.
Then maybe even read up on someone's experiences with the disorder.
Then work it into the BBLoCQ for the character.
