In space settings where sentient or semi-sentient aliens still haven't been discovered and mankind is opssessed with the fact, is there any way to split Humans into races without going into factions or actual races so there's some variation or should I just pick one of the two?

If there's no reliable or fast travel between worlds, and humanity doesn't take extraordinary measures (like, continues caravans of sublight habitat-ships to promote genetic drift), humanity will inevitably split into races. Hell, Terrans, Lunarians, Martians, Titanians.

When you say races, do you mean subspecies

More specifically, can the various "races" interbreed, or are they only capable of procreating with their own kind? After you answer this we can give you some more information.

Genetic engineering. Different groups of humans are modified to live in different environments.

In principle the same thing would happen naturally given enough time. But it would have to be over a huge timescale, and there's no good reason we wouldn't have already done it artificially.

to touch on this further, depending on means (its a universally free option vs people must pay out of pocket or become indentured for a bit) there will be a distinction between those "naturally" born and those "engineered" genetically and then those with mechanical implants

Earth: Born into a world which crafted their biology. They are perfectly suited to the environment in every way, while also receiving the vast riches the rest of the empire gathers for them. They are the privileged.

Early Colonials (e.g Mars, Venus ect.): Born to worlds that opposed their very existence, using harmful and dangerous technology to terraform and build settlements. They often suffer mutations in the form of hereditary diseases, though their basic form is left in-tact, as the planet's gravity and atmosphere are almost always earth-like. These are the middlemen of empire, collecting and distributing wealth, while keeping very little of their own. Some possess the only manufacturing for space exploration and terraforming, making them powerful worlds within the system.

Workers: These are the generational labourers born in mining colonies and on spacecraft. They are sick from birth, deformed from their conception in reduced or 0 gravity. They suffer bone deformities, radiation sickness and mutations, high rates of cancer and those who cannot adapt to the minimum oxygen environment wind up brain damaged or dead. It is brutal natural selection for a people who amass most of the empire's resources, yet keep none for themselves.

Independents: Those among the colonists that saw the harsh reality of early colonisation and sought to find a better life. They are ragtag groups of people who spend everything they have to build something for themselves, far from the tyranny of Earth, Mars and any planet that would try to claim their hard work for their own. They are often subject to the worst of natural selection, and most never make it past the second or third generation. Those that do must sacrifice not only their biology, but their entire mindset. They must cast off notions of unconditional kindness and brotherly love in order to survive. Frequently, even if the colonists survive, what passing exploration teams find is far from human.

Mostly it boils down to gravity, or lack thereof. Experiments have shown that lack of gravity has some really adverse effects on growth and development, which will probably apply to human embryos as well.

Does spinning your habitat fail to compensate for that? I'm not familiar enough with the physics involved to know if that's the same as real gravity or just a close enough approximation for most purposes.

The easiest way would be to split them apart visually. Say, one group only wears full body environmental suit's they never take off, the other wear normal outfits, and the third are humans that transplanted their minds into metal bodies, and so have divorced themselves from their a humanoid shape.

Yes, spinning your habitat is the same as real gravity, as long as you don't try to do weird things. There are differences in the Coriolis effects, but you'll only notice those if you're, say, throwing things from one end of the station to the other. (On Earth, you have to compensate for the Coriolis effect when using long-range artillery)
