Hobbits are a variety of men and pass onto the next world, dwarves are gathered by their creator god sort of like the elves and Tolkien was rather fuzzy on the origins of the orcs so thats up in the air.

Tolkien had an issue when it came to writing about conflict in his books (probably due to his time in the trenches).
Often he would either gloss over or simply sum up the battle. He'd much rather write about the history of a mountain for 2 pages than tell you about the hobbits trying to climb up it, for example.
For this reason specifics concerning who what when and where require careful and diligent reading to uncover.

The hobbits were too far from the wars to care actually, that's why the hobbits were like tourists just seeing the outside world for the first time.
To be honest, even though the whole war was the most glorious moment of man in the books. It was also the saddest moment for Sauron, as you can see the whole realm was on the brink of a chaotic war between all the peaceful nations as racial hate was growing worse and poverty was rampant (Laketown, dwarven treasure horde taken by a dragon, Haradrim is a barren land with too many mouths to feed, etc.). Sauron saw all these and sacrificed his physical form once to save the realm, sadly the realm was still unstable so Sauron had to sacrifice his very own existence (the last thing he has) to save the realm again.

Saruman was indeed the wise.. since he was wise enough to see the sacrifice of Sauron, wise enough to betray his own gods and lose his humanity/divinity so that the realm could be saved.

Since he died before completing it we can't say he wouldn't have turned it into a story rather than a history book but to each their own. I enjoyed it but agree it was quite dry in parts.
