I'm trying to find a video of someone using a staff weapon practically. It can be any type - halberd, quarterstaff, pike, spear. Doesn't matter.

Pretty much every video I've found so far have been choreographed fights with lots of idiotic flipping and spinning.

But a lot of them are just flailing about randomly. I feel like maybe I'm using the wrong search terms, maybe someone else will have better luck.

It's a martial art for the bayonet.
Not a perfect 1:1 for spear fighting, but pretty close.

Came here to post naginata. It's still competitive so there's a limit to how much frippery can slip in.

It's a point sparring sport so it's warped a little by that. Point sparring sports tend to have combatants standing at a longer range than full contact combat sports like boxing, by about a full step. The one-step jump where your rear foot lands where your forward foot was tends to be viable in point sparring, but not in sports where how hard you hit matters. The other major bit is that they reset at clinching, which has the effect of both combatants acting like they think they're better at grappling than the other.

This is a slightly more performance oriented version of the two man butterfly v spear set. The entire form is designed for practical use, though, the movements are just a little exaggerated so you can actually see them--and having met YC Wong multiple times, he needs to do that, because despite being like 85 he's fast as fuck when he wants to be.
