To actually speak on OPs topic, I quite agree. As a GM, you don't need to stat every character, you can just make up relevant difficulties, dicepools and related stuff on the fly.
You can also encourage players to find different ways for players to kill adversaries than to engage them in battle. Drop a boulder on them, poison them, set up their rivals/authorities to do the job, etc. Unless the adversary is important to the GMs plot, they shouldn't even need to roll to see if the adversary dies.

"Rocks fall, everyone dies." can be used on the enemy too.

Good idea. Since we should be pretty good at fighting owlbears by now, this should be an easy fight if we stat it as an owlbear.

Actually, that's an interesting idea for a quest: immortal bad guy wanders land, unable to be defeated because he stole his own metaphysical stat_allotment and the heroes have to go on a journey across multiple planes of existence in order to make him mortal again.

I think it could be a fey beast that prances along the shore. It waits for young people to play in the beach after dark, drags them into the water, and then dances on their heads until they drown. It mutilates its victims, collecting some grim trophy like finger or a foot, then places it in a bag that is carried with the monster at all times. It is said that the spirit can only pass into heaven once its bags are filled to the brim with viscera. For the sake of appeasing these monsters, villages by the coast will often chop up livestock and leave the remains at the beach as an offering.

They are typically reported skipping and hopping near beaches. Perhaps such fey are the vengeful spirits of revelers who died from carelessness.

It's bags likely hold lumps of alien organic matter. The weight and consistency of such material helps to balance out the magicians own chi, giving it an anchor to our realm.
