Usually you'd want to start with someone that has a mild curiousity in it but lets presume thats not the case here.
First, you want to give them that curiousity. Talk to them about it, discuss your latest session or maybe ask for ideas if you're a DM or looking to build a character.
Then maybe invite him along to a session or schedule a session just before a date you've set so that you can invite him to it and explain that afterwards ye can go straight to the place where the date is.
Then, if he displays interest at this point, offer to show him the ropes. Run up a one on one session (this is your chance to practice DMing too) and help him build his character. If, at this point, he remains interested or even becomes more so, see if the DM is okay with an extra player and invite them into your group, assuming all is cool with the DM.

There's farm land everywhere which means you're bound to run into a farmer's daughter eventually.

Game designer here. You can try to get him to play, but you can't force him to like it. That's like me forcing you to eat a cake you don't like. Sure, I like it, but no matter how much I pay you, you won't like it.
