In 3.0 and 3.5 the vanilla fighter is considered quite weak compared to other classes in any level 5+.

Champion because I was told it's pretty basic and straightforward.
The party consists of:

No one wanted to play as a healer so having a large amount of hp has been nice, though the party has been relying on me to stand in the front and play defense with the other fighter while they do their own thing from behind us.

To be totally honest I think at least half the problem with vanilla fighters is that people build and play them badly. It's less of a bad class and more of a class that's easy to trap yourself with due to overspecializing in one thing and then finding yourself not being able to do that thing and not having any backup plan.

They're pretty strong in 5th edition. Whenever I want to play a different class, I have to think to myself "Why am I not just playing a fighter instead?".
They said they'd make fighters the best at fighting overall, and that's what we got. Yeah, your paladin and barbarian can burst, but fighters can burst too, then sustain their goodness as long as they have hp.

the stereotype of "DM'S GF CAME A RUINED EVERYTHING!" is generally due to the girl in question not knowing anything about the game, which is always a problem, no matter who you are, and the DM bending over backward to pleas her. If the DM's girlfriend happens to be a good player themselves, and he's not a retard who feels the need make everything about her, than everything turns out fine.
Also, there probably are just some players who are autists and just assume everything will suck because a player happens to be the DM's girlfriend.

I am actually kind of in this situation as the GM's boyfriend that just started playing recently, and was wondering if anons could give me any additional tips or critique on how not to be that guy.
Here's what I do to mitigate any potential player GM fraternization fears and fuck ups:
-I don't play party face or combat monster characters. Tend to play support/control/crafter characters. (e.g. currently playing an analyst in a Star Wars AoR game)
-at character gen I made my character last to better fit whatever the group needed.
-read core rule book cover to cover to stay familiar with the game's rules.
-stay engaged with the game, and plan my turn in advance.
