Actually, there is a compromise.
Overcooking via traditional methods helps to ensure safety by killing microbes, but ruins flavor by denaturing the proteins that make shit taste good.
Undercooking preserves flavor, but leaves you open to risk.
Sous-vide cooking is the best of both worlds. It's low temperature cooking for extended periods of time in a controlled environment. You can get sufficient temperature hours with it to kill microbes, without ruining the flavor.
