The reason they're used as Familiars is mainly due to tradition, which the cats themselves established.
Many familiar cats come from old families, and familiar cats can actually be communicated with via a certain spell.
Too bad the cats tend to engineer the falls of any spellcaster that discover their secrets, within reason.

I was playing a homebrew RPG with two friends set in a semi-futuristic universe, and one of our objectives was the assassination of a huge local drug dealer, to clear a bit the street market for the ones who hired us. The target was ultra paranoid, had bodyguards, was monitored by several private security companies, and couldn't be killed directly without taking ridiculousy high risks for our characters in the process.
So we snatched her cat when it was outside, implanted a remote-detonated bomb inside its belly, and gave it to a kid in the streets who could claim the reward for the "Lost cat" that had been "lost" for 2 weeks.
We waited two more days, and when we were sure that the target was home, we detonated the explosive.
GM didn't even throw a dice, considering that, in his words, "that paranoid cat lady spent most of her free time with her cat sitting on her legs, enjoying treats, and judgung by the size of the cat, it was A LOT of time."
So we had a nice bonus from our boss for doing the kill without any kind of suspicion, and striking fear among the other drug dealers.

The actual best thing about cats is they're low-maintenance and they won't maul you to death. Most dogs are bred to work jobs that no longer exist, they can't get the required amount of attention what with their owners having their own unrelated lives and careers, and they're in a pretty much constant state of being bored out of their minds. The worst-case scenario for a dog is some pretty grim shit, and all it takes is one bad day for even a well-trained dog to decide it's going to tear a child apart or something else to break the tedium of its meaningless life. The worst-case scenario for a cat isn't that bad.I'm living it right now.There's a reason why cats don't make your insurance premiums spike the way dogs do.

This is extremely rare, and almost never happens with a well trained dog. Depending on the breed, they can't do any serious damage anyways (of course this changes if you have a wolfhound or something). This also can be prevented by introducing the dog after the child. Even with a cat, the dog wouldn't think about hurting it if it accepts them as part of its family.
