besides the obvious, reptile mounts, bats, carrion crawlers, the deep rothe, centipedes, spiders, the occasional badger, armadillos and moles and maybe ankheks and rust monsters... what other animals/magic beasts or animal-like monsters live down there in the underdark?

Blind fish and cave salamanders are some obvious ones.
If you're playing D&D, then deep rothe will likely be pretty common.
In subterranean rivers you could have cave crocodiles.
In the largest underground seas and oceans you might find cave sharks, species which have evolved into freakish forms due to their eons hidden away from the sun.
Plesiosaurs are good, if you feel like doing something Lost World-esque
If you're asking for more monstrous creatures, then I actually have a list for that.

Oh, and you could also probably find cave crabs and lobsters in shallow pools or still water. A giant version of those could make a good enemy.
