his next most acclaimed album is a solid but overrated jazzy-pop album from the 70s, instead of a folk-jazz masterpiece like its predecessor
Veedon Fleece and Saint Dominic's Preview are both good but not even close to being on par with Astral Weeks too
It's Too Late to Stop Now is also good

Pretty much this. Astral Weeks transcends Van Morrison's discography. Everything else – even the good stuff – pales in comparison.
IMO, the only other acoustic guitar/singer-songwriter albums that are as good as AW are Benji and Pink Moon. Those are already /mu/ canon, so that probably doesn't help.
