Equestrian politics generally keeps the princesses busy. Even with Luna's return, Celestia still spends most of her time dealing with some issue or another. They may not all be crises on the level of Tirek, but there's going to be plenty of events that might not quite call for the services of the (former) bearers of the Elements of Harmony to tackle. Perhaps there are similar troubleshooters across the country to rely upon in general. And Celestia does go herself to some hotspots, but she can't be everywhere at once.
So all in all it's nice to have a few instances to just relax.One reason it's nice to preside over so many ceremonies, too.
