I don't know, her arc is pretty much complete.
All that's really left for her is to climb the ranks within the Wonderbolts.
A bittersweet episode where Soarin' retires and RD takes his place? It'd be fitting, and a good lesson, but not really relevant to kids who aren't even near their prime yet, they'd have to put some weird spin on it.
I don't want to see Dash climb further than that, she makes an excellent leader but I think she needs someone above her keeping her in line, or strict orders to follow.
More stuff with Scootaloo and a heavier involvement in Scootaloo's arc. I'd love to see Scootaloo fly with some mechanical aid, like the iron wing from the S5 finale for example.
Another Best Night Ever or Hearts and Hooves day, no one says anything outright and the episode runs it's usual course, but in the background Dash is seen talking to and even dancing with a mare.

As for the Gumball and Gravity Falls reference, it's pretty clear that those shows are ment for an older audience, judging by the plots and themes. Gravity Falls is about two kids goofing of with their uncle, but it had some pretty complex themes, like the illuminati. Mlp is about 6 magical ponies having shenanigans. It's pretty clear that one in designed for a much older audience than the other.

Fluttershy's element is an interesting problem. To test her she'd have to be in a situation where she desperately wanted to be UNkind, and was kind anyway. Might be hard to pull of with Fluttershy since she's already so naive and accepting that something would have to be truly unapologetically evil to get her to be that way. Discord didn't really ever sell that. It would be a good excuse to revisit the Changelings, but it skirts the limit of what Hasbro is willing to put in the show.

Well, it doesn't have to be another assertiveness thing. Lets say Chrysalis is trapped in a cave of manticores leaving her brood leaderless and broken. They approach Fluttershy to save her as the only pony who could soothe the monsters. Fluttershy finds it difficult to want to save the Queen from the fate she so richly deserves, but finds it in her heart to rescue Chrysalis. The dialogue and scenes would have to be well done to sell the attitudes and story, but something like that could work.

It's quite interesting to note that Equestria, after only about two years of war, have prosthetics so advanced they allow articulate flight, to the extreme level where the wearer can still perform well in a combat scenario.

It seems ponies are mostly complacent, and don't seek to improve on much unless circumstances force them to.

Both, actually. But in different ways.
Gilda and Pinkie fall on one side of the spectrum, they're both wild and untamed like Dash, and have an easy time seeing eye-to-eye when it comes to interests like flying (Gilda) and pranks (both, Pinkie more). Pinkie is occasionally "a bit too much", but you'll see them hanging out a lot more with each other than with anyone else.
On the other side we have her oldest friend, Fluttershy.
If we see Tank and Scootaloo as part of this group as well, it's easy to see Dash as a protector. More than that even, she stands up for them when no one else will, and helps them be the best they can be.
They'll never see eye-to-eye as equals, and won't have many shared interests, but Dash obviously gets something out of their relationship or she wouldn't bother. A sense of fulfillment? Or of duty? Their adoration?
She can certainly connect to others as well, but not in the same way. I can't say I've noticed much hinting towards that, but maybe I just haven't been paying attention. Fluttershy definitely isn't claustrophobic, she lives in a tiny cottage. Neither is Scootaloo, the clubhouse and her room aren't very spacious, taking into account of course the skewed proportions that goes into making good cinematography.
For Rainbow too she deliberately chose to race in a very narrow valley in May The Best Pet Win, she was perfectly fine in Discord's maze, and although minor because she's arguably lost in another world, she reads her books under the blanket in for example Read it and Weep.
I'd also argue pegasi wings don't need such protection, even if you point out when and where pegasi are mostly claustrophobic I doubt that's why. The reason being that pegasi wings are nearly indestructible, there are numerous occasions where Rainbow Dash crashes through building walls on a failed stunt or similar, at one point she even flies headfirst into a pile of rocks on purpose, the only time we've ever seen her injure her wing was in an incredible off-screen stunt.
