All that means it's that whoever is in week one is all that can compete in week one until there is only one person not eliminated. You only have those seven days to join each weeks pool of contestants. Week two is over and 150 people joined? That's it for week two. Let's see who lasts the longest from week two's entrants. Etc.

how about each month the time constrain increases by half hour (next month would have to be 1 hour spent on a drawing), so that in months or years it gets actually physically impossible to do the challenge, then you could implement a highscoreboard with who has the most challenges under their belt, who has the longer lasting challenge, etc

I don't want the challenge to people with more free time. And an extra half hour per month is ridiculous, you'd have to draw for six and a half hours every day by the time a year passed. It wouldn't last long at all. I like the way it is now, of course you can draw longer, but if you're busy it's not impossible to fit it into your schedule. I don't think the challenge is meant to be very difficult, it's just to impose the good habit of drawing every day.
