What phone/rom should I use in order not to get royally probed by google while still retaining the features/usability of a modern smartphone?
Is pic related a good solution? If so, what phone should I buy and install this on?
Performance is not very important to me, but decent battery life and a good camera would be nice.

Stay on stock and remove the useless google apps.
There's no other way if you want to the usability of a modern phone and a good camera.
Custom ROMs often have total shit cameras.

That's really only relevant for phones like the xperia z series, where the image processor can't be used without certain keys only available in the stock rom.

A Nexus 5x or 6p, install Cyanogenmod without GAPPS. Install Xposed privacy to limit what harmful apps can read (or only install non-harmful apps from f-droid). If you have to use whatsapp, get it from their site, they are kind enough to provide a apk. Finally, if you have to use google services like maps, mail or whatever, get gapps browser from f-droid (https://f-droid.org/repository/browse/?fdid=com.tobykurien.google_news). For everything else, there are free replacements. Even for google maps you should really use osmand but then there are some situations in which it would be nice to have access to google maps.

Oh yeah and I would not trust any other roms besides CM and maybe replicant. If you can't compile/build the rom yourself, don't put your faith in some 13 year old indian kid. Just use Cyanogenmod or AOSP (maybe even stock if you don't mind google services)
Whatever you end up installing, disable the crap in pic related.
CM with Open GApps Pico

this fampai
The official CM gets updates every day, so any vulnerabilities will get patched rather quickly, too.
CM and pico gAPPS are the patrician's choice.
CyanogenMod without Gapps. Get apps from Fdroid, or from a trusted google play mirror.

What are some trusted mirrors? I'd rather download them from the devs themselves. Is there some sort of list for that?
