There is a very noticeable difference. Whether it's preferred is entirely subjective. I think most people adapt to it if they watch it all day. The only caveat is that some types of videos do poorly with motion interpolation, like animation.

None or a lot, depending on what you convert.

No, you'll need some AviSynth magic to finish converting before trying to watch. The magic is terribly buggy and kinda hard to set up, though.
