What's the name of a server that you can use to do whatever you want with, install any operating system, etc? like a VPN. I just want to get some free trial server accounts to use to convert some files from one format to another, compile large projects, etc. Preferably in gentoo.

Dedicated server or VDS. VPS is a container VM, basically a chrooted OS with quotas. You cannot compile and install your own kernel on it, for example.
