I'm looking to upgrade my early 2011 Macbook Pro with more memory and an SSD.

Are the "specifications" from Apple bullshit? Is there any reason I can't put 2x8 GB 1600 MHz in?

is the limitations of chipsets and cpu controller, you can try put 8+4 so 12 gb and see if it boot.

16GB will work.
Apple just never officially sold it with more than 8GB.
