Will someone explain to me how exactly credit/debit cards and card machines work? You swipe the card and funds are taken out of your bank account. This blows my mind

The only information stored on the card is basically your account number. The card machine connects to your bank, says "account number <something> wants to pay 20 bucks, yes/no", and your bank's computers take it from there.

I only know about it in terms of machine code to high level programming language, but basically look up how to convert binary to decimal, really cool shit.

I think it has to do something with the mutual induction between two circuits (the one on your card and the one of the swiping machine). If the geometry of the whole thing (form and position of your card and the machine's) is constant, so is the mutual induction coefficient. In this way, you can have a clearly defined number that can be associated to your bank account.

This is what the stripe on your card actually looks like. The card reader picks up on those lines and decodes that into useful information.
