Should I upgrade my i5 2500k ?
I'm buying 1070 and I don't know if my processor won't drag the GPU down.
I'm only talking about gaming performance
Obviously upgrading is always better so why not but the thing is I'm broke as fuck
Is it overclock ?
OC it to 4.2Ghz to 4.5Ghz and you're fine.
Has anyone ever tried to overclock it to 5.0 ghz ?

Yes, upgrade.
There are people who have said they have high end cards, such as 980 Tis, and upgrading to a newer CPU got them 20+ more FPS in games.

Well, what game? Look up CPU benchmarks for what you play. I'm keeping my 2500k for now. Maybe Zen will result in a good upgrade, either a zen chip it's self or in changes with intel's pricing.

Some games have the older CPUs bottleneck the GPU like shit, since you're gonna get the 1070 you probably will have to, but you shouldn't really think of doing it now, get the 1070 and benchmark, compare benchmarks with people with 6600Ks, make your decision based on that

I had it at 3.3, was getting 50 fps in gta 5, after OC to 4.8 I get 80-90

Most 2500k will do 4.5ghz with 1.35 , some even do 4.8ghz with 1.35 , im sure you can adjust that a little :)

If you have a stock heatsink/fan on there, don't expect much of an overclock. You should be able to get to about 4.5 with a cheap CM 212 Evo though

I was able to get my 2500k to 4.2 on stock fan(in a huge ass case) temps topped out at 87 which was too highfor me but not really to high at all

Depends if you play at 60FPS you're not going to get bottlenecked by the CPU at that frame rate in most games.
I have a 4690K stock and I play at 1920x1080 60FPS and the only game recently that managed to choke my CPU was Fallout 4.
If you want to play at 144hz then you're going to need a stronger CPU to make use of any GPU utilization you have to push for high FPS.
