iOS devices use a type of M.2 storage, it's super fast, faster than most commodity SSDs right now (especially on the iPad Pro), and it's all in a tiny memory chip.
People will whine and say "well I can buy a 128gb MicroSD for X amount cheaper than more built in storage", but MicroSDs are still total shit for read/write performance and reliability.
I'd much rather pay a bit more for a phone, an iPhone or whatever, with more built in storage than rely an expandable storage.

Apple's pricing in Australia matches pretty closely to the pricing in the US according to the exchange rate, plus the GST.
They update the pricing whenever there's a big change in the exchange rate, a few years ago when the AUD went into parity with the USD they actually dropped Australian prices to match.
