Is it currently viable to use something like a chromebook for the purpose of remoting into my home desktop?
I want a laptop but I don't want to spend a lot of money. I would rather keep most of my computer money into my desktop and just use the laptop as some sort of terminal.

What about latency issues? Is the lag a problem which would make doing anything besides coding a chore?

Chrome OS is good enough for that purpose as you can get a terminal that works in Chrome and therefore, SSH into anything.
That said, Gallium OS is Xubuntu patched to work well with Chromebooks, and gives you quite a lot more freedom since it's a honest to god GNU/Linux desktop. So it's a bit dumb not to prefer Gallium-compatible devices. Plus I'm sure Gallium will allow you to run X11 windows over SSH, while I don't think ChromeOS gives you that privilege.

At work I used a pixel and it was fine, you can probably get away with a lot less. I got my non-pixel Chromebook off Craigslist for a song, and it can struggle with YouTube. Get something better than that.

Used it when I worked from home. I think the tool is called "chromoting". Honestly, it wasn't even great coming from a MacBook pro. Ssh was fine though, but something like eclipse? I wasn't a fan.
