I'm getting an Associates Degree in Information Technology next month from a Community College in Florida. What jobs should I look out for as a IT person looking for work?

I always hear that there are places in Doral that are hiring for tech support. Just make sure you're bilingual (because everyone in the county needs Spanish), and you should find an opening there.
My reccomendation, though, if you can handle it, would be to get a Bachelor's at FIU. Either there or somewhere else, because you're eventually not going to be satisfied with whatever you're doing, and a Bachelor's will be able to open up a lot more career options.
Either that, or just get out of this county while you can.
