I use a slimmed down win 7, its literally a 7 gb install.
I only used this vm for a vpn connection, checking an email, and scraping threads that average 100 mb and immediately move it off of the vm to my real os.
anything more and my default is 25 gb for the 7gb install. I've done things like this for years and its never been a problem before.

I always give my VMs 100 GB or more, because hard disk space is cheap as fuck and why not? Better to be slightly overkill than reinstall the VM from scratch.

I have literally dozens of them, and Ill make a new one for any bullshit reason, paranoid security reason. Have a vm just for interview. vms for pirated compilers. vms for proprietary software. vms for porn. vms for emails.. no point in having a shit load of .5 tb virtual machines. when small is easy enough to deal with.

If all you do is play video games, just stick with Windows 7. There's literally no advantage in terms of using Windows 10 when it comes to "m-muh games".
That's the reason most "gaymers" and streamers use Windows 7. They don't give a fuck about their OS as long as it werks and they can play vidya.
If you want something slightly faster and more responsive, just upgrade to Windows 10. Once I get a bigger SSD, I'm just going to buy it. No point in hanging around on Windows 7 for another two years.
The problem with Windows 10 is it gets in your way a little bit. It also doesn't have drivers for my MOBO.

My desktop is from 2008 and it was a prebuilt and it handles it fine, I dont see why anyone else would have an issue doing this. Just make sure the settings dont rob you main os or max out your system.
