Just look up the changelog. It's also less about the kernel but about the rest of the system as well. Using "stable" is good for servers. For desktops it is advisable to set something like ~amd64 so you're not stuck with age-old applications.

Manage your /etc/portage with git
Back it all up on a USB stick.
Find a clean way to move your rootfs between filesystems (probably with tar | tar).
Place your rootfs on a LUKS volume.
Most importantly, take your time.
More often than not Gentoo users have what is effectively the same system for a half-decade at a time.
Use systemd.
Keep your system minimal.
I like the i3wm, you may want to use i3 too.
Don't get too wrapped up in your actual system, make sure you're using your system for things that are actually important.
Make sure to attend a transformative music festival or two like Lightning In A Bottle.
Make sure you go outside, being inside all day will kill your soul.
