There is no way to go full freedom on a phone line.
You would be better off getting an voip number carrying around a 4g remote access point and running everything through there encrypted.
Then make your own voip company because you wont be able to trust anyone to do it for you.
Also you are still fucked on the other end.

AOSP and the whole Android project goes way, way out of its way to try to avoid using as much GNU-licensed software as possible to avoid 'infecting' it and to allow vendors to close bits of it off.
And of course, Android proper comes with proprietary Google software - and they have strict, secret licences for how you use it if you want to be allowed to ship it for your device.
Not to mention that nearly every supported device requires so many proprietary drivers that they tend to have to run out-of-tree or completely forked (/borked) kernels: the SoCs tend to be absolute hackjobs in hardware, and the software supporting them patched barely enough for them to work.
So, it's not surprising the founder of the Free Software Foundation doesn't like something that kind of pretends to be Free Software but is really mostly only Open Source. It's a start, but it's not really the kind of start he'd like.
>muh freedom
That's ironic coming from a commie like Stallman
