Don't give up, OP.
You don't need GAPPs if you don't want them.
Try going into recovery, and clear cache, and Dalvik cache, then reboot.
If you wiped your ROM, copy a stable ROM for your device onto the device from within TWRP, flash it, wipe cache, Dalvik cache, and reboot.
As a beginner, your going to make many mistakes. Lurk in the forums that pertain to your device, and read everything you find. Also, don't flash nightlies, or ROMS that are still actively being developed until your confidence grows. I've been using various custom ROMs over many devices, and I can assure you, it is all well worth the effort.
However, if you're only interested in ricing your UI, try Nova Launcher, or one of the many other custom launchers that are available.
