Ubuntu or Fedora. Both have pre packaged set ups for most DEs. So for instance if you don't like the GUI that unity provides in ubuntu you can just flip over to KDE or GNOME or XFCE etc. If you're new that's the most you'll care about. Also they are generally the most straightforward to install. Enjoy your newly found freedom.
