I want to encrypt lots of files I'm gonna save on a DVD. How should I do that?
7zip them with a pw, then burn to dvd

You have a few options:
1. Encrypt the entire disk (including the FS)
This is fast, safe and easy - but has the downside of the entire drive appearing like gibberish unless the OS is equipped to recognize the LUKS header, and it also means losing your key would make the entire disk unreadable including all metadata etc.
2. Encrypt individual files with, say, GnuPG
This is slower and less convenient, but it would allow you to still be able to see the files (including metadata like the name and directory structure) in any PC. You could also use different keys for different levels of importance.
3. Store everything inside an encrypted .tar or other archive format.
This combines some of technique #1 with technique #2, but makes it somewhat more OS-agnostic in return for making it slower and less convenient.
4. Use a FS with encryption support.
This is something like technique #2 or #3 except faster and more convenient, but the downside would be that (again) your OS has to support the specific FS being used.
Personally for a personal backup/archive I would just go for technique #1, and indeed that's what I do for my long-term backups.
Just make sure you don't forget the passphrase :^)

Use whatever you want, 7zip/tarball whatever.
Just never use the whole 4.7GB of the disc, and try to divided the data into smaller parts.
