I live in a room without any ethernet ports and don't have any cables long enough to reach our router which is upstairs.
Any alternatives that I could use to help with my connection? The walls of my house just throttle the connection and because of that my ping in most games is absolute dogshit.

Also, my ping swings from some times being 45-60 to 200-300.
Would this provide a constant <60 ping or should I still look elsewhere, i'm just sick of not being able to play most multiplayer games without there being ridiculous lag.

The speed depends on how old and shitty your power lines are. I have it and only miss a very small percentage of my actual connection compared to WiFi. Also use WTFast for that sick 18 ping like I have.

I've been using a powerline setup for about a year now, and it works at about ~80% of the speed of having my desktop wired directly into the router and no noticeable ping difference. I get 18~20 ping on servers inside my country either way.
As long as the electrical wiring in your house isn't really old, or retarded, it'll be fine.

If yours have some system where you hit a button to pair them up, they're encrypted. They might be able to fuck with the signal quality but I don't think eavesdropping is possible.

House was built I think in the last decade or so and we've never had issues with power, so I think it'll be fine then.
Worst case scenario I have to return it and then figure out a decent looking wired setup.
