I want to dual boot Windows and Linux. I have some Ubuntu experience,

You could try the testing branch of Debian, if you don't mind having to install sudo and non-free repos, it's not hard, it's just tedious.

I jumped from Ubuntu to Arch, then I tried Debian and Fedora, then manjaro and now I'm back on Arch, the installation is not that hard and it makes you learn a bit more about your computer, if you do it consciously.

openSuse is one of the biggest distros for professional use, and you aren't even a beta tester as a private user as you are with Fedora/RedHat

Ubuntu. I dunno what issue you have with it, but it's got crazy package support, updated regularly, and it's designed to be a good "i don't know what i'm doing" desktop os for people who've never used linux before. Several of my co-workers learned their way around linux through ubuntu. If you're going into any sort of web hosting gig, learn centos or redhat (they're basically the same). It's used by pretty much all of our enterprise customers, so any experience in that environment is beneficial.
