Why people use Linux on desktop like they would use Windows ( gui ), when they can just use Windows as normal person would and use headless Linux machine when needed.

Linux is open source, it's easier to install programs (via command line), different desktop environments, option to be completely headless, better filesystem layout in my opinion, better command line programs, way more command shells (bash, dash, zsh, ksh, csh, etc.), way easier to control through scripts and much more.
My desktop dualboots windows 10 and Ubuntu for games and general computing, and my thinkpad x41 runs a headless arch linux for programming.
