I use Jota text editor to edit text-files stored in my dropbox. Simple and flexible.

There is no proper open source alternative to Keep that works as swiftly.

If Keep is benefiting your quality of life, why stop using it? Assuming you're not looking for validation by going GAPPS free, just install Keep and no other ones.

Look up TiddlyWiki, it's a personal wiki software that is actually one fancy html file. You can use something like Syncthing to sync it between devices.
