The underlying mathematic fundamentals are what define the difference between a mediocre CS grad and a great CS grad.
Lets be honest, syntax and the concepts of OOP are things you can learn in a month. The theory of computation, discrete mathematics, or large-scale software design principles are things that take 3-4 years, i.e. a bachelors.

Implementing mathematics is one of the most important things in computer science.
Understanding algorithmic stability, zones of convergence, error, etc, is a fundamental core concept of CS.
You're an embarrassment to yourself and the profession if you get a CS degree without covering this.

It sounds kind of shitty but professors don't care about whether you learn skills that are useful in the real world. They teach because they're told to. At best they might wish to teach a particular class to scout out and lure in potential undergrad lab slaves for their research. It's hard to blame them though since research quality is the main way they're judged (they can always curve grades up to keep people from complaining, which seems to be the case these days).
