It is a very broad question.
Dolphin. It is a filemanager with a built in terminal so it you get the best of both worlds.
Grub-customizer. It is a graphical frontend to configuring grub. No need to bother with config files.
Kile. It is a text editor that is turned into a latex editor.
It has graphical menus for everything from making a table to inserting special characters.
Really configurable.

I like xfce on Fedora Linux 2bh.
Enlightenment was pretty buggy on Fedora, but I have a weaker laptop and I'm running enlightenment on tiny core.
Also the default tiny core de is pretty nice and basic, only uses 80mb ram if that's ever a constriction
