Of course, the kernel is simply reloaded into memory as it gets hibernated, not shut down (something you can totally do in win 7 too, btw). The uptime count sums all the sessions between kernel reboots.

The timer doesn't reset if you use sleep/suspend or hibernation, because the session is saved either to RAM or your HDD. Start your computer up from either of these two, and the timer continues where it left off.
If you reboot or shut down the machine normally, the timer will reset. If you kill the power to your machine without putting it into hibernation first, the timer will reset.
Oh, and for the record, if what you said was true and the timer didn't reset, yours wouldn't be saying 7 days either unless you got that computer literally a week ago.
