I have a Xeon X3440 in my desktop. It's basically the same as an i7 from around 2009.
It's even less Xeon-like than most other Xeons, e.g. you can't have two of them on the same mobo.
Intel is kind of a dick for only allowing MP in the Xeon line. I should be able to have dual i7s.

First of all, it's Xeon.
Next, most people can't afford the base hardware to use it, and even after that you have to actually get the processor itself, which will run you about $4500, and then a compatible motherboard, so another $500 or so, then ECC sever-grade RAM to go with that motherboard, which is basically another $250 right there, and that's assuming you have a power supply powerful enough to support the mainboard and a case to hold it all, not including storage, peripherals, or anything else, it's all about $5400 or so.
How do you know I'm not already using an 18-core Xeon, though?

Quite frankly, 8-cores is a lot even for heavy productivity purposes, with co-processors fast becoming vastly more viable than extra CPUs. Having four Titans or Tesla cards (if you need ECC) is generally a better investment than two high-powered CPUs if you can utilize CUDA. You would still need a pair of Xeons for 4x16 PCI-E lanes, but it's enough just to get some basic ones.
One thing to point out is that QPI really hurts any process that can't make use of both CPUs, games especially will take a huge hit in minimum FPS.
Thinking of swapping out my 4930k with one of those 2667 v2 or 2687 v2 Xeons one day, but those datasheet prices will never drop. Sheeeeeeit.

You're looking at the wrong chips. The first number of the Xeon code refers to the max number of chips you can run in tandem, 1xxx, 2xxx, 4xxx means single, 2-way and 4-way respectively.
For instance, the 1660 v3 and 2667 v3 seem fairly similar, except the 1660 v3 is actually the Xeon equivalent of the 5960X and is just as overclockable, whereas the 2667 v3 cannot be OC'd and costs over 2x as much. You're literally paying more just to be able to pay even more for for dual chips.
The chip you actually want to look for is the 1660 v2.
But I do OP for dat 4k video editing and rendering. Anything below a Xeon is pleb tier.
