Got this piece of shit that was about to be trashed. It's from 2009, has OS X 10.5 installed. Had to hunt down a Mini-DVI adapter just to get video out, even with a video card installed. Currently trying to install some flavor of Linux onto it, but it doesn't boot like most computers - it uses EFI which is a bitch to get just right. Rather than fucking around and using up all my disks burning multiple attempts, I am trying to find a disk image for some flavor of Linux that is already configured for EFI booting. My Linux knowledge is pretty rusty, so I looking for the easiest solution. Any suggestions?

It probably uses Apple's bullshit 32-bit UEFI system. It's not gonna be so simple to install GRUB and expect it to work.
I'd recommend trying to get rEFInd installed onto it. That usually has good results on Apple hardware.
That all said, the server is probably a big power waste. PPC had huge power consumption back then, and I can't imagine it's worth even half that now. You'd probably be better off taking a few hundred bucks and build (or buy a cheap used) home server.
Can it boot from USB or DVD? Mint/*buntu images can boot from EFI. If you boot the media via EFI, it will always try to do an EFI install onto whatever HDD you install it to.

It can boot from DVD, not sure about USB. The manual way to boot only lists devices that are already configured to EFI, and the manual method of selecting a boot device is done via button presses and front LED lights - no USB option from there.
