Real bonsai trees are basically a large tree variety that have been pruned in such a way that they remain small indefinitely. They start out the same as any other tree, they're usually grown in the ground at the start. After a few years of growing you dig them up and cut the roots back and then the foliage and you put them in a tiny pot so the roots become constrained. The small pot limits the size of the tree so it remains pretty small afterward. They still require regular pruning though to keep their appearance.

The bud from bonzai cannabis probably wouldn't be great if it is possible. I believe cannabis requires a lot of nutrients over its lifetime if you actually want to use the bud. If you just want it for display it might be possible.

Cacti are pretty low maintenance, other succulents too. With desert plants the main thing is not watering them too much. They can take quite a lot of abuse but if you water them too much they start to rot. If the soil is very dry and crumbly that's basically like their home turf, they can survive in that condition for a few days to a few weeks(larger/older plants) and nothing will really happen to them. Give them a good soaking every 2-4 weeks and then drain the excess water and repeat. If they start to turn yellow/brown/reddish they want water so you need to water them now. Generally they shouldn't go that long without water but they probably wont die, they're very resilient plants

I would mostly recommend a cactus if you don't want to deal with the plant often. Cacti are usually slow growing and they don't produce many pups at a time. Other succulents tend to grow fast and reproduce fast. If you don't have a way to deal with all of the little plants they start to become a giant mess.
