I wanna unlock my phone, and websites ask for payment to send me the unlock code.
Anyone here know how exactly they get those codes? Is there any way to do it myself? It feels stupid to pay somebody to google my phone's model number or whatever and email it to me.

If it's locked to a carrier, you'll need to contact the carrier to unlock it to use a different sim.
If you mean to unlock the phone to install a custom rom, you contact the phone manufacturer. Or google. Motorola for example is easy with a quick google.

I recently bought a Wileyfox Swift which came with CyngnOS, which allows unlocking without going through a whole convoluted method of unlocking. Which was nice.

Changing the SIM won't help.
The carrier-locked phone will simply refuse to recognise the SIM.
There are plenty of phone shope (usually Asian-run shopfronts or kiosks) that will unlock it for a fee - usually ~$30. Or you can get unlock codes off the web, either free or paid.
