The 980 and 970 destroys them both, but they're not even in the same price tier.

A 390 will match a 970.
A 390X will match a 980.

The 390 gives the best price to performance ratio of any GPU on the market.

Strange. If you go on Sapphire's website you'll see no Nitros that are clocked at 1040 MHz.

Some Nitros have Backplates and some don't, that's really the only difference between models aside from clock speed.

How do you know if it has a backplate or not? And while we are being honest, what backplate means?

I know this version has a backplate because it's clocked at 1010 MHz. The version with no backplate is clocked at 985 MHz.

A Backplate is basically a material plate on the back of a graphics card that both protects the PCB and helps with cooling components on the Board somewhat.

Optional - some cooling.
The budget is 1000Euro, but I would like to go as low as possible.
Here is what I've looked at so far:
CPU - Intel Core i5-4460
GPU - Sapphire Radeon R9 380X NITRO
CASE - FRACTAL DESIGN Define R5 Black
MOBO - MSI B85-G41 PC MATE

The motherboard you chose only supports original Haswell in it's stock form, not the refreshed products. In order to get that board working with a Haswell Refresh CPU you would have to either use some Haswell CPU you can find lying around to update BIOS (Not likely), or you would have to flash the BIOS onto the board, which can be a pain sometimes.

So look around for any other cheap board that supports Haswell Refresh without any BIOS updates.

Z87 is even worse, none of them support Haswell Refresh natively.

Only Z97 and H97 are guaranteed to work with Haswell Refresh out of the box. Some Vendors released a second version of their H81 and B85 boards to be compatible out of the box though. Look for any H81 or B85 boards named 2.0 or version 2. Or just settle with a H97 instead.

Apart from more PCIe slots on full ATX, it doesn't really matter.

Although if you are gonna go ahead and get a H97 I suggest you look for something that has at least one M.2 SSD slot.

Seems pretty good, I think you could go with a motherboard more in the 100$ range though if you don't plan to do sli, go for a Dell ips monitor, don't buy windows. Maybe get a 970 > 980 and go ddr4/6600k, but it's not necessary.

Cheap z97 motherboards only have a 16x and 4x pci slot. Nvidia's antiquated dual graphics tech is called sli and requires at least two 8x slots so every board isn't sli capable.

Ips is a type of monitor panel with better color and deeper blacks than tn panels.
