I remember at my internship this summer the workstations had these fancy arms where you could pretty much move the monitor any which way and let go of it, and it would stay, and they clamped on to the desk

sounds like you didn't put the screws in properly. VESA mounts use 4 screws on the back to attach it to things. Very common thing for monitors and Tvs and such.
If you properly tightened the screws, the arm should break before the monitor comes off. It *almost* always is screwing into the metal back inside the monitor

NOTE: make sure the monitor is light enough for an arm like that. If the monitor is too heavy, then it will just sag the arm down onto the desk. Check comments before buying.
