fun fact: Debian doesn't seem to work if you use manual partitioning to try and use full-disk encryption *without* LVM. Something gets set up wrong and it won't unlock the disks properly at boot.

I just let it do its LVM thing on the boot drive and then once it boots I encrypt the rest of my drives how I want. Debian's a pain sometimes but at least once it's set up it never breaks. more than I can say for some distros.
